The Funghi Club & Carvers Hill Estate

Join us for one very special evening on Friday 30th October 2026, as Chef Laurent Lebeau (Head Chef & Patron of The Funghi Club) brings his French cuisine to the incredible dining hall at Carvers Hill Estate.
For one night only, Laurent has created a menu designed to showcase the best of the season, with each course thoughtfully paired with sublime wines from Carvers Hill Estate. Expect beautiful food, exceptional English (and French) wine, and a little French flair, all under one very impressive roof.
Carvers Hill Estate say: “We can’t wait to enjoy the Carvers Hill Estate wines poured alongside Chef Laurent’s menu, which looks delicious! In particular our Chardonnay, which is an extremely limited release (only 1,200 bottles made), so it will be a treat to pour it in the winery for such a fabulous dinner.”
The menu includes canapes of mini eclair with cold roast beef, crab and prawn arancini, and wild mushroom and truffle quiche, followed by roasted queen scallops with lobster gel, a sole paupiette filled with crab in a lemon hollandaise, six-hour red wine braised beef cheeks with a Bordelaise jus, and a lemon and raspberry meringue tart to finish. Each course is paired with a Carvers Hill Estate wine or a Bordeaux red.

About Carvers Hill Estate
Carvers Hill Farm was acquired by the Griffiths family in 2007, in a stunning valley overlooking the North Wessex downland. In early 2020 a specialist English viticulturist analysed the soil and climate and found the greensand-over-chalk terroir and south-west facing slopes ideal for vines. In spring 2021 the team from Vinescapes planted 22,000 vines across 6 hectares of what had been wildflower and grassland meadows, and the estate now produces its own English wines, including the extremely limited Chardonnay being poured at this dinner.
About Chef Laurent Lebeau
Laurent trained for three years at the prestigious Lycee Hotelier in Nice before moving to London, where he worked his way up through the Michelin-starred Ma Cuisine and then Cafe Pelican, before rising to Executive Head Chef of Groupe Chez Gerard, overseeing 87 restaurants and over 350 chefs. Since 2006 he has run his own private chef and consultancy business, cooking for private clients including former Prime Ministers and celebrities, and was Head Chef at the Wimbledon Tennis Championships in 2014 and 2015.
